Top Tips from celebrity Chef Simon Rimmer

Ingredients:
- 4 rashers of streaky bacon (if you want to create a loaded club sandwich then use 5 rashers)
- 3 slices of white bread
- 1 plum tomato
- 2-3 medium slices of chargrilled chicken or approximately 100g chicken breast (you can buy packs of ready sliced chargrilled chicken breasts in most good supermarkets)
- 1 large slice of mild cheddar cheese
- Handful of lettuce (we love a crisp iceberg for this recipe)
- 1 teaspoon of free-range mayonnaise
- 4 toothpicks (used to secure the sandwich in place)
Method:
1. Fry or grill your bacon until it’s cooked to your desired crispiness level
2. Whilst this is cooking put your bread in the toaster until lightly brown and leave to one side to cool slightly
3. Slice your chicken breast (or put to one side if you’ve bought pre-sliced chicken) and slice your cheddar cheese
4. Slice your tomato and set your jar of mayonnaise to one side ready for the next step
5. Butter one slice of toast and add your cheese, half of your chicken, a couple of slices of tomato and some lettuce
6. Next, spread half a teaspoon of mayonnaise on to your second piece of toast and place it, mayonnaise side down, on to your previous slice of toast
7. Repeat this with your final piece of bread but remove the cheese and add all the bacon to it instead
8. Cut the sandwich into quarters and place a toothpick in the centre of each one to hold it all together – trust us, you’ll need it with all these delicious ingredients in!
